Foody Thursday - Pizza Primavera

We had at exchange student from France last year staying with us for 2 weeks and he was immensely surprised that a pizza could be made at home - fast, easy and delicious. The main trick here is thin yummy crust made in the microwave. Yes, yes, you got it right - microwave!




I usually make double recipe, but here is the recipe for regular portion:

1 cup warm water
2 tbsp dry yeast
2 tsp sugar

Mix and let sit in the warm place for 15 minutes. Here is what it should look like.



In a large microwave safe bowl, mix our bubbly substance and add

3.5 cups all purpose flour
1 tsp salt
4 tbsp olive or sunflower oil
1 egg

Knead into pliable dough, cover with plastic wrap. Now exciting part:

Place covered bowl with dough into a microwave and heat for 25 seconds at 50% Power level

Leave in a microwave for 30 minutes, take out, knead well, cover again and heat in a microwave for another 15 seconds at 50% Power



Divide the dough and roll out. For regular recipe - 2 large cookie sheets, for double portion, accordingly 4. You could also use pizza sheets, I just don't have them - for my family shape does not matter



Leave prepared unbaked crust for 15-20 min to raise.

Pre-heat oven to 220C

Poke the crust with a fork and bake till half-ready - about 10 minutes.

I slightly overbaked the one on the picture below, it has to be lighter.

Now, you have a choice  - make pizza right away or wrap half-baked pizza crust in plastic and freeze until needed.



To make pizza:

1. Spread sauce on the pizza crust - whichever one you like - tomato, white sauce, even mayo

2. Add your favorite toppings! I used Italian sausages (cooked and sliced), black olives, red bell peppers - sliced.

3. Add lots of shredded cheese.

4. Bake at 220C till ready - about 15-20 minutes. If using frozen crust, do not de-freeze, just increase the baking time to 25-30 minutes.

5. Party!
