Foody Thursday - Eggplant Rolls

No meat, no grease, no eggs. Well, except for one egg - in the EGGplant. Excellent appetizer, goes well with beer, vodka, dry. Fast to make - will disappear from the table fast as well.




Ingredients:

1. Eggplant - 2 large
2. Green bell pepper - 2
3. Avocado - 3
4. Garlic - 4-5 cloves
5. Salt
6. Pepper
7. Olive oil

Steps:

1. Wash and thinly cut the eggplants lengthwise, add salt, let sit, drain the juice.

2. Original recipe calls for frying eggplants on both sides. Yak! Way greasy... I sprinkle the slices with olive oil and bake in the oven or throw on the grill for about 3-5 min on each side.

3. Wash bell peppers, cut, remove stems, finely chop.

4. Add finely chopped avocado, garlic, salt, peppers.

5. Place 1 tbsp of the pepper-avocado filling on one side of the baked eggplant slice and roll it up. You might want to secure your roll with a toothpick.

6. Exceptional for scaring off the vampires on Halloween - you will be smelling of garlic for hours!
