Foody Thursday - Raspberry Truffle Cake

So, you think you know what sin is? Right? You know NOTHING!!! But you are just about to learn. And if you are vegetarian, vegan, on diet - don't even bother reading. RASPBERRY TRUFFLE CAKE



1. We will need to bake a basic chocolate sponge cake - you can use the packaged cake mix if you have to :) or follow the below instructions:

60 grams semi-sweet chocolate chips
and
1/2 cup butter - melt with chocolate then add
2/3 cup cocoa powder
1 tsp baking powder
1/2 tsp salt
2 cups sugar
1 and 1/4 cup buttermilk
3 eggs
1 package of vanilla sugar

mix well and add 2 cups of flour

Pour the butter into slightly greased baking pans / molds and bake in a pre-heated to 180 C oven for 35 min.

2. Raspberries - fresh or frozen - 3 cups


3. Chocolate glaze

1 cup whipping cream
1/4 cup butter
350 grams semi-sweet chocolate chips

Put all the ingredients in a bowl and warm up in the microwave till chocolate melts, mix well and let cool.



4.    1 cup whipping cream
        3 tbsp icing sugar

Whip till steady peaks - just like this!


5. Now lets get to the assembly:

Chocolate sponge (we have it cut in 2 or 3 layers depending on how thick our sponge was) is getting covered with chocolate glaze, raspberries on top.




6. Whipped cream follows


And voila!!!!
Now, that you lost your virginity - get your fork out and dig in!!!!!


By the way, the first picture was not done this time - just an idea of decorating - chocolate butterflies!!!!
