Whatever people say - this is Ukrainian Dish. We used to make Pierogies every Sunday, a batch large enough to feed the entire neighborhood. Usually the whole family is taking part - some are rolling out the dough, some putting in the filling, and the rest sealing the edges to make it look like a half-moon.
So, ingredients:
Dough:
3 egg
1 cup of water
3 cups all-purpose flour
1/4 teaspoon salt
Filling:
mashed potatoes, mushrooms, green onions, all sorts of berries are used, but for this time just:
2 cups fresh pitted sour cherries
1 cup sugar
Directions:
1. To make the filling just mix cherries and sugar and let sit for about 1 hour, we need the juice to come out, otherwise our pierogies will fall apart.
2. To make the dough, stir all the ingredients until dough comes together. Knead the dough on a lightly floured surface until firm and smooth. Roll the dough out to 1/8 inch thickness. Cut into 3 inch rounds using a biscuit cutter.
3. Place a small spoonful of cherry filling (that would be about 4-5 cherries) into the center of each round. Moisten the edges with water, fold over, and press together with a fork or fingers to seal.
4. Bring a large pot of lightly salted water to a boil. Add perogies and cook for 3 to 5 minutes or until pierogi float to the top. Remove with a slotted spoon.
