Foody Thursday - Amazing Potato Bake a la Salina

This is a wonderful recipe my Facebook Friend Salina shared last week, she also kindly allowed me to share it in turn with all of you. Thanks, Salina!


So, easy and fast to make. No meet, no eggs, all you need is cheese!!!



Ingredients:



1. Potatoes - used a lot of those, may be 12
2. Onions - I used 2 large
3. Zucchini - I used 4 midium size
4. Tomatoes - used 2
5. Cheese - 1/2 pound, mozarella
6.  olive oil
7. Salt
8. Mrs Dash - love this one with passion - all dried herbs and spices, no preservatives, no salt, no artificial nonsense, large jars - Costco, small jars - no frills

And I can't do no more typing today, here are the pics of the process


First layer - potatoes, seasoned with salt and Mrs Dash, and olive oil on the bottom of your baking dish or tray


Layer #2 - Onions


And Tomatoes



And zucchinis

And shredded CHEESE on top
Salina suggested adding 1 cup of chicken broth, and I am pretty sure this would add extra flavour. I did not do it for 2 reasons - I don't use broth ever and tomatoes were ridiculously juicy. But you are welcome to try!

Now, I covered it with metal foil and put it in a oven for 40 minutes, at 180 C, removed foil and broiled for another 15 min
