All the vegan (and not so vegan) blogs I've been reading keep making yummy breads. I decided to try a foccacia but then realized that Josh really likes the bread from Macaroni Grill (which is a sort of foccacia loaf). Ok, I had been eying the Green Tea cupcakes in Vegan Cupcakes Take Over the World, but I wasn't able to find Matcha (steamed and finely powdered green tea). The recipe says nothing else will do. My Google reader is loaded with over 30 blogs. Many of them are crafty blogs, but I've had a recent surge of adding vegan blogs. In particular I am LOVING Vegan Dad. This lovely gentleman posts the daily meals he serves his family, and usually includes a recipe. They always look exactly like something I'd prepare and eat. Some of the other vegan ( Read more... )

I really enjoyed the Peanut Butter and Jelly muffins I made on Sunday, so I made another batch. The strawberry were made with homemade preserves given to me by a parent of a student, and those muffins are mine. In the back you can see the grape ones for Josh.

I had a long to-do list for Spring Break (which is now 1/2 over) and I haven't completed much. I knocked off a little work for my online class, did some minor crafting, and cleaned the living room and kitchen. I was craving corn bread and found a milk-free mix and made it with rice milk and egg replacer. They were crumbly but oh so tasty!
