I really enjoyed the Peanut Butter and Jelly muffins I made on Sunday, so I made another batch. The strawberry were made with homemade preserves given to me by a parent of a student, and those muffins are mine. In the back you can see the grape ones for Josh.



Last night I made a vegan quiche, the recipe from the Ultimate Uncheese Cookbook, modified to add spinach and mushrooms. The "eggy" part, made of tofu, white beans, and other flavoring, was very creamy. It wasn't as spongy as quiche can sometimes be. I might go for more flour and Ener-G Egg Replacer for that next time. Otherwise it was tasty.



Today was surprisingly cold (high of 79, so cold for this time of year) and cloudy, so I made some soup for dinner. Kind of the last chance for soup. It's vegan chicken noodle and tastes much like I remember lipton packets to taste. I used morninstar strips which get melty soft and mini shell noodles. I had some vegan garlic toast on the side.



The last 2 days I've had one of these tasty sandwiches for lunch. I mix some avocado and green onion with vegan mayo and spread it on thick. Then I add cucumbers, mushrooms, and sprouts with a pickle on the side! So tasty and satisfying :D
