My second cupcake from
Vegan Cupcakes Take Over the World is another success. I'm liking these even more than my
first vegan cupcake. They are the basic chocolate cupcake with chocolate buttercream frosting. I was surprised that the recipe for the frosting called for 2 1/2 cups of powdered sugar. I put about half that and it was already sweet enough. The cake was moist and much better tasting than the boxed cakes, and not too sweet. The frosting was rich and creamy. They were enjoyed by Josh, my brother, his girlfriend, and I dropped some off for my sister and her hubby.
