Another FOOD post!

I have become obsessed with reading vegan blogs lately and drooling over the amazing creations and noting recipes that I need to try. Fortunately I have all the time to try things out considering I'm on summer vacation (5 more weeks left). Unfortunately it is summer, 100+ degrees, and the dumbest time to be baking and using the oven. It hasn't stopped me yet though.

Last week my mom was in town for a short visit so I had to introduce her to vegan cupcake heaven. I made the chocolate ones again but this time sprinkled them with grated lavender vegan chocolate. Apparently an expensive variety my sister bought me that has way too much lavender that it tastes more like soap. I also topped them with fresh raspberries!




Today I tried 3 different things out. I had an eggplant that I had bought last week that was super cheap and decided to try VeganDad's breaded eggplant recipe. Basically the same thing as Eggplant Parmesan, but vegan.



They were amazingly delicious. I cut the skin off and cut the slices thick and they came out tender, but not smooshy. I ate more than I should have, and have enough for lunch tomorrow too! I can't wait!

I also have a bag of limes that needed tending to so I stumbled upon a vegan lemon bar recipe that I decided to Lime-ize! I used to love making the Krusteaz brand key lime bars, but these were much tastier because they weren't super sweet. I found the recipe here. They didn't look anything like the final photo, but they tasted great!




Finally, tonight, I took another stab at making seitan. This time it was back to trusty VeganDad's Boneless Chickenless Wing recipe which calls for breading the seitan in panko and then baking them. This time I had much better success, although I am still slightly disappointed with the texture. I did eat 3 of these though :P I made the wing sauce that he recommends, but didn't measure anything and changed a few ingredients. I was scared to make it too hot, but it never got hot enough. I also don't know why mine puffed up way more than VeganDad's.
