I found a small beef roast that has developed freezer burn. Do you think it would be edible if I cooked it in a crock pot on low?

I'm looking for a good recipe to use with a chuck roast. I want to do something a little different besides beef stew and pot roast. Does anyone have any suggestions or favorites recipes they'd be willing to share?

This is a new favourite food among my boyfriend and I: Drunk chicken. We used this recipe and used paprika and rosemary in the rub. We also added garlic and onion to the can of beer before putting it in the cavity of the chicken.
