I'm absolutely in love with citrus and recently picked up some limes for jerk seitan. I was so excited about having these limes, that I went ahead and ate one raw (sans juice for the marinade). I just wanted to say that I made a wicked-mean key lime pie last night and it was incredible. It takes a while to set, but once it does it is so creamy and limey and delicious! I'm also pregnant and craving face puckering lime flavours!

When I was watching Emily on Martha Stewart they also showed the Lime Meltaway cookies and I was drooling! A shortbread cookie with lime can't go wrong!
