I just wanted to say that I made a wicked-mean key lime pie last night and it was incredible. It takes a while to set, but once it does it is so creamy and limey and delicious! I'm also pregnant and craving face puckering lime flavours!
I got the recipe from Vegan Planet, but I've altered a bit to suit my tastes. I thought I'd post it here in case anyone was interested in a limey-summer dessert.
Ingredients:
2 pre-made graham cracker pie crusts (it's vegan!)
3/4-1 cup sugar
2 12-oz package of extra firm silken tofu, drained
1-1/2 8-oz packages of vegan cream cheese
3/4-1 cup fresh lime juice, (3-4 limes)
1) Preheat oven to 350F. Combine the tofu and cream cheese together in a food processor or blender. Once blended and smooth, add sugar and lime juice and process again until smooth.
2) Pour the prepared mix into pie crusts and bake in oven for 40 minutes. Turn off the oven, but leave pies in for another 30 minutes.
3) Remove from oven and let cool to room temperature, the refrigerate for a few hours. (I make this just before supper and then cool it in the fridge over night.)
