We were only going to have leftovers for supper but I decided to add a couple more things to the menu. So I made oven barbequed pork back ribs and oven broiled potatoes. It was 79 degrees in Scottsdale today and I hauled out the old grill to get it ready for the spring/summer....lucky for me, I live in Arizona...and the weather is gorgeous....meaning lots of time to practice on my grilling technique. People rave about my ribs....I feel the trick is in baking them for at least an hour (on 350):

Idea: Buffalo Ribs.

I'm pretty sure I can order them really fresh.
In my experience with buffalo; steaks and burgers have to be really rare and taste amazing. But you can cook the hell out of buffalo bacon (try it sometime) and it's wonderful.

I have no ribs experience.

Thoughts?

I LOVE ribs. And over the years I've come to the realization that the secret to ribs is long, slow cooking. This leaves you with a set of ribs that are falling-off-the-bone tender and saucy. But it took a bit of practice and the discovery of one special secret to be able to produce a consistently good plate of ribs...
