Idea: Buffalo Ribs.

I'm pretty sure I can order them really fresh.
In my experience with buffalo; steaks and burgers have to be really rare and taste amazing. But you can cook the hell out of buffalo bacon (try it sometime) and it's wonderful.

I have no ribs experience.

Thoughts?

I had buffalo once, about 9 years ago. It was ground, it was a burger, it was heaven.

Bacon is one of my favorite foods of all time.

Never thought about buffalo bacon. I must make a note to try that sometime. :)

mmmm, buffalo. I have had buffalo burgers, and buffalo bbq brisket in New Mexico. When I was working there, we got a lot of our meat from a meat company in Phoenix, I wonder if they would have it?

I live in Denver. I have no problems getting buffalo meat. I COULD burrow a hummer and go mow one over off the highway.
