Try beef & veal smoked sausage (not hot) -- get at Fedco
slice in thin slices, brown in butter. pour in scrambled eggs. when almost done, sprinkle w/chopped green onion, cilantro & some piquante sauce. Put cover on for a minute and serve.
Chop up small yellow squash, zucchini, onions, mushrooms, red peppers, tomatoes, garlic, fresh basil.
Saute onions in olive oil, add tomatoes. Then add all veggies and saute all. Then add a little chicken broth a little at a time to cook veggies in until desired tenderness. S&P
(*ED NOTE: This is a closely guarded family recipe. NO ONE could make sauerkraut like my grandma, and she made sure of that by being very, very vague with this recipe.)
