1.5T olive oil
10oz fresh turkey hot italian sausage
1 med. onion, sliced
1 med. green pepper, sliced
1 med. red pepper, sliced
1/2c white wine
heat 1/2T oil over med or low heat. Add sausage, cover skillet. Cook about 11-12 mins, turning until browned. Transfer out, increase heat, add remaining oil add veggies and saute about 5 mins until lt. brown. return sausage, add wine and simmer about 5 mins. Serve over Polenta:
2.5c water
2/3c yellow cornmeal
1/2t dried basil or fresh
1c grated cheddar cheese or parmesan
lightly grease 9" round pan. 1c water & cornmeal in small bowl. Remaining water boil in a saucepan. Stir in cornmeal mix. Cook over low heat until polenta boils and is very thick, stirring about 6 mins. Mix in 1/2c cheese, season w/ S&P. Spoon into pan, sprinkle remaining 1/2c cheese over. Prepare 2hrs ahead of time. Let stand @ room temp. Preheat broiler, broil 5" from heat until cheese bubbles and polenta browns on all edges. Cool 5 mins.
