YUMMMM I haven't had the chance to try Daiya yet. Is it melty and good tasting or does it taste starchy and drab like most vegan cheeses?

daiya is nothing at all like other vegan cheeses. it definitely melts, gets stretchy, has the best flavour, is fantastic. highly recommended.

A lot of people do like it, but I thought it was disgusting! Hands down the worst vegan cheese I've had, it was incredibly slimy, and weirdly sharp, but not in a good way. It reminded me a lot of oily raw bread dough, both in texture and taste.

this pie would be fine with any other vegan cheese you like. what's your fave brand?

OK OMFG. I will address the rest of your post momentarily. WHEN is Daiya coming out in retail-sized packs? And does this mean I might be able to get it somewhere besides the deepest caverns of vegan holiness?

Ok. Even without the Daiya, this sounds phenom. I need need breakfasty stuff.

Does it keep okay? I have a lot of sleepy, early mornings of Pop Tarts - I need something I can heat up and shovel down, because I want warm healthy food in the morning, and I am incapable of cooking when I get up. :)

it would keep a few days in the fridge, and even longer in the freezer! i had it for dinner but it would make a fantastic breakfast.

Do you have a toaster oven/a couple large ramekins? I haven't done it a lot, but I like taking normal casseroles or whatever, but baking them in ramekins, freezing them, put them in the fridge the night before to thaw, and then finally reheating them in the morning in my toaster oven. Wait to put any "cheese" on top until 5 minutes 'til the end of the last step.
