Here is a modified recipe for Chicken Riggies-very very easy, not quite authentic, but easy.

Ingredients: 

• chicken tenders (not breaded or anything, just plain chicken tenders from the meat case) or chicken breasts
• onions, mushrooms, sweet pepper, cherry peppers, garlic
• rigatoni
• black olives-pitted, small

I have to give Sparky away, or rather, find him a new home.  Tomorrow he is going to live *temporarily* with my Mom.  She's not the best animal caretaker, and probably won't care for him the way I do (doling out his food in 1/4 c. increments so he doesn't puke it up all over the place, mainly), but at least its not the pound-which the ones locally ( Read more... )

We made it back from vacation!  It was an AWESOME trip.  I loved it. It was amazing.  St. Lucia is a beautiful country--the people were great, and it was so beautiful and relaxing.  I am posting pics in my facebook and myspace pages soon.  It may take a little while...but they're coming!
