Heat up some garlic and olive oil in a pan.
Add some proscuitto chopped up (or I often use pepperoni, its alot less expensive and not as salty)
Add some chopped up hot cherry peppers and a couple of spoons of juice from the jar-I usually use 1 or 2 cherry peppers for the recipe
Add chopped escarole or spinach. You will need alot because the stuff shrinks like you wouldn't believe. I would use a bag of chopped frozen spinach or a couple of heads of escarole. You can also mix and match. :)
Once that is all cooked down, you will need to add some parmesan or romano to the mix. Then add some breadcrumbs to soak up the juices. If you want, add some mozzarella cheese.
You can then mix some olive oil with breadcrumbs and sprinkle on top and place under the broiler with some mozzarella cheese or skip that step and just eat them.
I also like them the next day as giambotta. You will take an egg or two, and beat it up. Toss it in the pan with a little olive oil and as you're cooking it, add the greens and mix them in together. Its heaven served with italian toast.
Now I am hungry and need to find something to eat!
