I wanted to make something new tonight, and this is what it ended up becoming (like some sort of Frankenstein... the world's most DELICIOUS Frankenstein, lol). My goal is to cook way more from scratch in the new year, so  here is a good start that tasted wonderful and is way better for me than fast food!

Say what you will about traditional/non-traditional pasta primavera, but this was really good and I'm very much wishing I had some more now, after looking at the picture! I think we're going to have to make it again this weekend.

Awhile ago I had this great green gazpacho in Las Vegas. This was months ago and I never forgot how wonderful it was. Found a few recipes online and mixed and matched them. I think this is similar to the one I had. This is refreshing and healthy. My sister says I'm just too lazy to chew my fruits and vegetables. But chewing is for suckers!

This was an awesome twist on traditional pancakes, and just as easy! Soooooo good! The ginger syrup is to die for. I loved it! We served these with a dollop of freshly whipped cream on the top. Perfect! We didn't change the recipe at all, and will definitely make these again..

This was really good and really easy! Perfect for a quick, satisfying dinner. I think next time I'd use fresh thyme instead of dried. They say to use dried but it's just my preference for the fresh.
