We make a lot of squash & pasta dishes in the summer time. I can't get enough of them! This has to be one of my absolute favorites so far (although I think any pasta that includes goat cheese is going to be at the top of my list!)

A lot of people are intimidated by homemade pasta.. it's really not that hard! The majority of the work is in the rolling and slicing part. You can speed up that portion with a hand cranked pasta machine, an attachment for your kitchenaid, or heck.. a pasta machine. I actually prefer to hand roll it though, it's just more fun to me that way! ( Read more... )

This was a great way to have a pasta dinner with just a little something extra. For those of you who don't eat veal you could easily substitute any other ground meat or a veggie ground "meat".

My boyfriend and I have been fairly obsessed with spaetzle ever since a recent trip to Virginia, where we had the good fortune of coming across a German restaurant that served a vegetarian spaetzle dish. Something about green colored pasta makes me a little weary.. but I went ahead and bought the tri-color rotini for this dish, since I figured the flavors would benefit. [I was right!] You can use regular rotini for this one if you don't like the tri-color kind, of course ( Read more... )
