We make a lot of squash & pasta dishes in the summer time. I can't get enough of them! This has to be one of my absolute favorites so far (although I think any pasta that includes goat cheese is going to be at the top of my list!)
This recipe was to make 6 "small" tartlets but we made 1 big one and 2 tiny ones, due to not having the appropriate pans. (I cut the recipe in half, and it STILL made a lot!) It was very tasty though. Supposed to be served with a dollop of ricotta on top but I forgot to take a photo after that part. ;) We served the veggie tart alongside some

Ok I swear.. this doesn't look like it, but it is technically a lasagna! Granted, it's a white sauce one, but still very good. Oh, and definitely not your cardiologist's dream meal ;) First, a couple pics..
Can you believe of all the food I've cooked over the years, this was the FIRST time I made meatloaf?? I don't know how such a simple dinner had been overlooked for so long. Could be because I didn't remember it very fondly from my childhood. But, I decided to give it a shot and found a pretty good basic recipe. It got rave reviews from my boyfriend
