Linguine with Sausage, Ricotta, and Arugula

I devised this recipe because I wanted to use some awesome ricotta cheese I bought at a farmer's market. The ricotta added a creaminess to the dish. It was perfect for this grey, rainy day.

This recipe was to make 6 "small" tartlets but we made 1 big one and 2 tiny ones, due to not having the appropriate pans. (I cut the recipe in half, and it STILL made a lot!) This was an awesome twist on traditional pancakes, and just as easy! Soooooo good! The ginger syrup is to die for. I loved it! We served these with a dollop of freshly whipped cream on the top. Perfect! We didn't change the recipe at all, and will definitely make these again..

Yep, I'm a little behind on posting here.. sorry.. more to come.

We FINALLY went to our local farmer's market after forgetting the past two months, so I went a little crazy with the veggies. :) Obviously I had to make a veggie lasagna before the weather gets too hot to want to use the oven.
