A salad I whipped up for dinner tonight. I served this salad with Filet Mignon and fresh bread sticks from the bakery but it could easily go with just about any meat dish or could even be the main course as it is fairly hearty and filling. This salad has potential to be quick and easy, if you don't refrigerate the cheese rounds as long as it says - as we didn't, but.. they don't stay as "pretty" if you don't, obviously.
