Awhile ago I had this great green gazpacho in Las Vegas. This was months ago and I never forgot how wonderful it was. Found a few recipes online and mixed and matched them. I think this is similar to the one I had. This is refreshing and healthy. My sister says I'm just too lazy to chew my fruits and vegetables. But chewing is for suckers!
2 lbs of green seedless grapes
1 cucumber diced
4 green onions chopped (i think i will add more next time)
3-6 mint leaves
1 1/2 cups of plain yogurt
2 tbs of white wine vinegar
2 tbs of olive oil
1 cup of cream (i didn't use this, but i think i will next time to cut down on the acidity)
1/2 cup of fresh dill (i omitted because i don't like dill)
salt & pepper to taste
toasted almond slivers
sprig of mint (optional)
Put everything in a blender or food processor and blend until smooth. My food processor didn't do the greatest job so I poured it in a bowl and used my hand blender. It's not so good when it has chunks in it. Top with almonds and mint. One recipe I found says to add cream cheese. That would be good too.
