Made both of these in the last couple of weeks as side dishes. Summer always requires potato salad. Both were made with most ingredients coming from the farmer's market/out of the garden.

Ahh....recipes and cooking advice from a comic writer.  A bit strange, but what do you expect?  I think I will try the sweet potatoes soon.  I would also do the marmalade but am allergic to onions, so making it would be kinda pointless.  Enjoy!

Probably not so healthy due to the butter, but the taste is really zingy and delicious. I am a potato fiend, so I could have happily made this dish my entree...and dessert as well. ;) This recipe would also work well if you were to reduce the butter/lemon juice/salt, as it does make a lot of "sauce". This is the traditional Latke recipe that my grandmother passed on to me.

LATKES (potato pancakes)

Ingredients

* 5 potatoes shredded fine or 1 bag of hashbrowns (thawed)
    * 2 onions
    * 3 eggs
    * 2-4 Tbsp. all-purpose flour
    * 1 tsp. salt
    * 1/4 tsp. pepper
    * oil for frying (canola is recommended)
