Smashed Potato Soup

I got this recipe from stefhen19. It was excellent, especially with added toppings!

½ cup coarsely chopped carrot
½ coarsely chopped celery
½ cup chopped onion
1 package (1 lbs & 4 oz) refrigerated garlic mashed potatoes
1 can (14.5 oz) 99% fat-free chicken broth
½ cup fat-free milk
2 tbsp bacon bits
¼ tsp salt
1/8 tsp ground black pepper
½ cup reduced fat sour cream

Optional toppings: sliced green onions, reduced fat shredded cheddar cheese, crisply cooked crumbled turkey bacon.

1. Coarsely chop carrot & celery. Place mashed potatoes in med saucepan. Gradually add broth and milk, whisking until mixture is smooth. Stir in carrot, celery, garlic press, salt & pepper. Bring to a boil; reduce heat. Simmer, uncovered, 10 minutes.

2. Remove from heat; stir in sour cream. Ladle soup into bowls; top with desired toppings.

Yield: 4 servings (about 5 cups)
