Happy Hanukkah!

This is the traditional Latke recipe that my grandmother passed on to me.

LATKES (potato pancakes)

Ingredients

* 5 potatoes shredded fine or 1 bag of hashbrowns (thawed)
    * 2 onions
    * 3 eggs
    * 2-4 Tbsp. all-purpose flour
    * 1 tsp. salt
    * 1/4 tsp. pepper
    * oil for frying (canola is recommended)

1. Shred or thaw potatoes. If using bagged hashbrowns, chop them up a bit so they have a finer texture.
2. Add potatoes to a large bowl with eggs, flour, salt and pepper and mix well.
3. Pour 1/2 inch of oil into a deep frying pan. Heat the oil over medium-high heat.
4. Carefully drop 1/4 cup of the potato mixture into the hot oil.
5. Flatten the pancake slightly so the center will cook.
6. Fry for several minutes on each side until golden brown and cooked through.
7. Drain on paper towels.

Serve latkes with applesauce and sour cream.
