So my Barbecued Chicken and Potato Medallions with Onion is a success. This what I made for dinner last night. Easy and tasty.
Depending how many people you are feeding you may need to adjust
I made enough for 2 people = 4 servings
BCPM
2 chicken breasts
half sweet onion
1 sweet potato
2 red potatoes
1/2 bottle barbecue sauce
1/4 cup lemon juice
1/4 brown sugar
water
garlic to taste
salt and pepper
cinnamon to taste
cheese (optional)
cut up chicken and marinate in barbecue sauce
mix some water, brown sugar, and lemon juice and set aside
cut up potatoes in circles and spray pan.
Pour the liquid over the potatoes or dip the potatoes and line pan.
There will be space between the potatoes because they are not the same size.
slice onion into pieces and throw on top on potatoes.
sprinkle salt, pepper, garlic, and cinnamon on top.
let this sit for an hour.
throw the chicken and cheese on top and bake at 350 for an hour or so.
Mine cooked for an hour and a half because of non universal potatoes slices to make sure it was cooked.
