Probably not so healthy due to the butter, but the taste is really zingy and delicious. I am a potato fiend, so I could have happily made this dish my entree...and dessert as well. ;) This recipe would also work well if you were to reduce the butter/lemon juice/salt, as it does make a lot of "sauce". Enjoy!
INGREDIENTS
12-14 medium-sized red-skinned potatoes
1/3 cup butter
3 tbsp lemon juice
1 tsp grated lemon peel (dried is OK)
1 tsp salt
1/4 tsp pepper
2 tsp dried parsley OR 2 tbsp fresh minced parsley
Peel a strip from around each potato. Place potatoes in a large pan and cover with water. Bring to a boil, reduce heat and cook for about 15-20 minutes or until potatoes are tender. Drain, and place potatoes in a serving bowl or pan.
In a small saucepan, melt butter on medium-low heat. Stir in lemon juice, peel, salt, pepper and parsley (if using dried), and heat through, stirring, for about 30 sec - 1 minute. DO NOT BOIL. Pour butter mixture over potatoes and toss to coat. If you are using fresh parsley, sprinkle it over potatoes.
Makes 4-6 servings (depending on how many potatoes you use!)
