Best thing I have cooked in weeks. Yummy! :D

Baked the Eggplant with Olive Oil, Tomato, and Parmesan Cheese in the oven and near the end of the cooking popped some Garlic Sourdough Bread slices in the oven with it and in about 10 minuets had heaven in my face.

I've made this thrice already and it came out perfect each time. My parents have been told to eat less meat, so I try to serve vegetarian fare like this whenever they're in town. And they love it! Oh, even my young nephews enjoy this pasta, too.

I'm not a huge fan of most Passover foods, but I've always loved matzo lasagna. The matzos soften up so that it is much lighter than regular lasagna. With this version, I added some of that density back by adding slices of eggplant.
