I love the fluffy ricotta and rich tomato sauce layered into traditional lasagna, but don’t always need the carb count from the noodles. These stuffed mushrooms are filling, hearty, and delicious. Double the recipe for a quick and easy dinner.

I've made this thrice already and it came out perfect each time. My parents have been told to eat less meat, so I try to serve vegetarian fare like this whenever they're in town. And they love it! Oh, even my young nephews enjoy this pasta, too.

I'm not a huge fan of most Passover foods, but I've always loved matzo lasagna. The matzos soften up so that it is much lighter than regular lasagna. With this version, I added some of that density back by adding slices of eggplant.

I finally joined the Daring Bakers and this is the first challenge I participated in: Lasagna of Emilia-Romagna. It's fresh handmade spinach lasagna with ragu and bechamel sauce. It was truly an indulgence after a 2-day ordeal!

This past Thursday night I decided to make lasagna and I did not have any noodles handy, so I made some. I used a recipe from James Beard on pasta for the noodles and it made a few too many noodles.
