I just discovered a half-used package of bacon in the fridge. It was opened, once, about 2 weeks ago, when I used six slices for a recipe. Then it was sealed back in its package and then stored in a ziplock. The expiration date is 12/30/06. Think I should chance it? Would you?

If it had never been opened, I wouldn't worry. But since it has, I'm a bit leery...

It doesn't smell, does it? Color off?

It's WELL within the spoilage date and you kept well-wrapped so it was only exposed to a limited amount of air before put back into the refrigerator...?

I mean I can understand cus food poisoning is no joke but the bacon will actually get crunchy and dry in the packaging so that you wouldn't eat it far before it actually gets moldy and rotten.

As long as it didn't smell bad or feel weirdly slimy, and it looked normal (if maybe a tiny bit dried out,) I'd use it. Bacon is cured with so much salt and preservatives I'd figured it'd be fine for quite some time.

If there is no mold, it's OK. It's not even past the date anyway.

Bacon is typically heavily salted as a preservative. Besides, you'll notice bacon is not in the freezer section in the grocery.
