I just discovered a half-used package of bacon in the fridge. It was opened, once, about 2 weeks ago, when I used six slices for a recipe. Then it was sealed back in its package and then stored in a ziplock. The expiration date is 12/30/06. Think I should chance it? Would you?

As long as it is not rancid & gray, it would be fine. BTW, bacon bought in the refridgerated section is not the same as unrefridgerated used in the old days by our grandparents. Meats nowdays have a use by, and 2 weeks is not bad as long as it was refridgerated & sealed.

I personally wouldn't eat it, but I don't eat mammals of any kind. I think it's completely safe to eat, particularly since it's not past its sell-by date. Bacon is cured so much that it shouldn't be a problem.
