Today was an attempt to make Doro Wat. The stew was way too thin, and outside of the obvious spice of the berbere, the taste (as Carl pointed out) was "blasé". Perhaps not enough onions; I've seen another recipe that asks for garlic and tomato paste, and I might try this in the future

i will say that the sauce we used at the restaurant was almost entirely diced onions and a (relative) little bit of berbere.

Don't get too upset - the only way to learn is to DO! Not every attempt will be a rousing success - its the journey :-) As long as you don't get sick its progress
