Ethiopian Attempt #01: Failure

Today was an attempt to make Doro Wat. The stew was way too thin, and outside of the obvious spice of the berbere, the taste (as Carl pointed out) was "blasé". Perhaps not enough onions; I've seen another recipe that asks for garlic and tomato paste, and I might try this in the future ( Read more... )

I wonder if QuirkyPandaCub can give you any tips, since he worked in an Ethiopian restaurant for a while, and likes the cuisine.

I will ask my Ethiopian co-workers for tips. One of them used to work at Ethiopian Diamond and still keeps in touch with the owner.

if you're willing to wait, i'll type up the recipe in my Ethiopian cookbook for you when it's unpacked.

i will say that the sauce we used at the restaurant was almost entirely diced onions and a (relative) little bit of berbere.

Hey Roger,

Don't get too upset - the only way to learn is to DO! Not every attempt will be a rousing success - its the journey :-) As long as you don't get sick its progress
