Some time ago, I began making a cabbage, rice and lentil casserole and inflicting it upon my cabbage-resistant spouse.

The somewhat less than optimal response led to me adding a portion of the cheezy sauce from kittee 's blog  as a top layer. This turned the casserole into what was judged "an acceptable vehicle for cabbage".

I ended up with a huge amount of chopped green cabbage, and no idea what to do with it. Some of it I've turned into kimchi, and some of it I'm going to turn into cole slaw (with vegannaise), but that still leaves about 12 cups of chopped cabbage, just sitting on the counter. Any suggestions?

Last night, I made cabbage rolls based off of a recipe from Vegan Lunchbox. However, I made some changes and they were pretty darn good.

The other day I was craving something lemony, so I combined two recipes together, made some modifications, and came up with a vegan and totally deeelicious lemony chickpea & tofu stirfy. It is really easy, cheap, healthy and doesn't take very long to make. No photos though, sorry!

Vegan and easily gluten-free! Someone posted the original recipe to another community I'm in--the "traditional" version has two pounds of meat in it, ew! I was thinking of using tempeh for stuffing instead, when a friend said she'd used potatoes and mushrooms before. I was intrigued and decided to try it myself, and the result was delicious!
