I hate seeing good food go to waste. This last weekend I found some of my carrots on the verge of collapse, even though I had them stored in one of those green bags. Granted, it had been in the greenbag for over a month, but still! Root vegetables are supposed to be hearty, aren't they? These were really the easiest and most flavorful things I have cooked in a while. I was kind of skeptical because I'd never used salmon out of a can but was really proven wrong. As much as I love to hate on Rachael Ray sometimes, I can't complain. Her recipes have always come out delicious, and trust me, I've tried a lot. :D

Buffalo Salmon

Salmon and buffalo sauce sounds like a strange combination, but this was good! The crispy panko and the spiciness it covered were a great contrast to the soft, mild salmon underneath. I made this hoping that my Buffalo-wings-loving teeneager might eat this. He, his girlfriend and my husband all liked it. A keeper!

This is delicious, and so fast and easy! The glaze soaks into the salmon, and it’s so yummy that even my non-fish-liking husband liked it. (It came out a little dark in the pictures - it looks burned, but it wasn't.)

One thing you can't say is that we are making the same 'ol things with these lemons. At least we have great variety. And no, we don't only make lemon meals now, apparently this is just the order I'm finding my photos. :P

Anyway this salmon was REALLY good and I'm not even a huge fan of fish.
