It's winter here in Australia -  perfect weather for ox-tail soup!

3kg (6lb) Ox tail - cut into "knobs", trimmed of excess fat
1 onion, diced
1 teaspoon minced garlic
Olive oil, for browning

3 medium carrots, diced
4 sticks of celery, diced

1 can Guinness
Beef stock
1 can condensed tomato soup

Chick peas, or Garbanzo beans, are great!

Chicken and sweet corn soup!

Ingredients

2 litres chicken stock
2 skinless chicken breasts
6 eggs
2 cans of creamed corn (440g)
1 cup frozen corn (I throw extra in 'cause I really like corn)

And the following seasonings (if I don't have these on hand, I do without and just add some salt)

I'm posting this one for dear Arwen, who is looking for recipes that freeze well.
This is a favourite of mine - and very easy.
Tho' this is a crock pot recipe, it's just as easily done on the stovetop. In fact it was originally a stovetop recipe that I adapted for a crockpot community.
