Pumpkin spinach pasta sauce (vegetarian)
Serves: 6
1 piece of pumpkin (between 1 - 1.5 kg, which is 2 - 3 pounds) - skinned, chopped into pieces.
Butter
Handful of fresh chives, chopped
1 - 2 cups cream
1 bunch spinach, washed and drained
Poppy seeds (about 1/4 cup)
Salt and pepper
Paprika
Nutmeg
Boil the pumpkin until tender, drain and set aside.
