Chick peas, or Garbanzo beans, are great!
Throw in a 1/2 to 1 bag (depending on how big your crock pot is) dried chick peas (soaked overnight, drained and rinsed), 1-2 roughly chopped carrots, 1-2 sticks finely chopped celery, one onion (finely chopped and browned until translucent), a handful of baby spinach leaves (optional - more if you like spinach). I think you could pretty much put any vegetable you had on hand in.
Throw in a few bacon bones (or a ham bone), add water or stock until ingredients are barely covered, and crock 6 - 8 hours on low.
Blend if preferred (take out bones first). Depends on the texture you like - smooth or chunky.
This recipe works just as nicely with split peas (whatever colour).
Serve with a dollop of plain yoghurt or sour light cream, a sprinkle of fresh chopped parsley and a squeeze of lemon juice.
It's really yummy!
