Like any BOE, they're valuable to anyone, so I think greed only, unless the person asks ahead of time (or if it's a guild run, rather than a random). For someone leveling a toon for the first time, that money could be really handy.
2.) Is it okay for an Enchanter to roll Need on gear nobody Needs in order to further their profession?
I never did, though again, if someone asks, I'm usually fine with it.

BOP - if no one needs and it's going to rot on the corpse, and the enchanter asks, sure. Otherwise, no. TBH if Blizzard thought this was a common thing, they'd implement the D/E rule for lowbie dungeons too.
Thanks for your response! A question about your answer for #1, though: Do you feel this way about profession patterns, too? (Everyone should greed.) Or do you think Needing on a pattern for one's own profession is okay? (Cause everyone could use the 1+g for a pattern from selling it on the AH.)
^I'm wondering because patterns don't bind on pickup. Also, my tailor was in a group in Outlands once where EVERYONE "Needed". Needless to say I didn't win it and I was rather vexed, because I highly doubt all five people in the group were, well, tailors.
In an ideal world, the person who can use the pattern can roll need, but if it's BOE it seems fair to let everyone have a crack at it. If it's BOP, then only people who can learn it, but again, it's hard to enforce in a PUG.

However, in a group where someone else was hitting Need on gems, would you also hit Need? (If you were on a JCer.)
I wonder because, while blacksmiths only need the ore (to turn into bars) for most of their professions, JCers need all of that *and* the gems-- which means they probably need double or more of the ore. So that was sort of my reasoning behind it. But I can see the holes in that, now. Hehe.

However, if people ask politely ahead of time about rolling on gems, I would probably say yeah go ahead. Patterns I think, BoE or BoP should go first to those who actually have that profession, usable at that time or not.

If they ask and the party agrees, fine. I personally don't mind, but unless they ask, I rather them just greed, as they do sell fairly well.

I'm pretty meh on this one. If they ask and the party agrees, I can't say they're doing anything wrong but it is gear that can be sold, used for alts, or someone is greeding because it's such a minor sidegrade they don't think it's worthy needing on. If an enchanter can DE that level of gear, it's fair game for them anyways with the disenchant option. If they aren't able to disenchant at that level of gear, no deal, you can't be 100% sure they'll even get to that point.

1. Never did on my JC, always greeded. If you ask ahead of time "hey, I really a XX to complete my XX" then sure, but only if you ask the group.
2. No. They could be needing against someone that could actually use it. If it's a full guild run and they asked (guild perk DE's, trying to get lots of mats, etc), then maybe, but you should be able to get enough mats through leveling to cap it out (with plenty extra) without having to need on stuff in dungeons. I follow the general rule that was in play before there was a DE button in the dungeon finder.
2a. BoE's become soulbound if you need them, so it doesn't really make a difference. Although I don't think you can trade a BoE that's become soulbound so if someone wanted to equip it you're screwing them completely. At least with a blue it can be traded.
Patterns should have preference to those who can use them. I will need on patterns for my professions if I don't know them.
