...as being too lore-strict? Going so far as to insist that certain concepts just absolutely could not exist because there are no PC class/race/whatever supporting for it

I say if it fits in the lore and your typical roleplayer doesn't flip out or get overly confused looking at it, then go ahead.
For example, I have a Sandfury troll character who defected to the Horde sometime shortly before the Cataclysm. She learned druidic magic from a Darkspear who was studying the art - she chose the hyena as her animal totem as a link to her childhood in Tanaris.
It's a little outlandish, but most people accept it because it's not a totally outlandish concept and it, for the most part, seems plausible with the lore the way it is. I get a few questions on my MRP, but nobody seems to really have qualms with the way I play her. :)
As for your half-elf gypsy, I think you're fine. If you've never had questions before tonight, then you're probably doing a fine job of playing that character and you just had bad luck/came across a lore nazi.
What I didn't understand about this person's argument is that what Blizz has written of the lore of the world is so little in comparison to everything that could go on.
I think yours is fine, quite honestly. To use your example of humans, if they didn't travel at all, Stormwind would cover all of Elwynn and more besides just to accommodate the population; places like Stromgarde and Gilneas City didn't just sprout people like so many mushrooms, and organizations like the Cult of the Damned and the Twilight's Hammer wouldn't exist if no one was ever dissatisfied with the way humans do things or unhappy with their lot in life. So what if you have a halfbreed who likes to move around a lot and doesn't feel an attachment to any place in particular? Just because they're not part of set-in-stone canon doesn't mean it's not plausible.
I think you're fine. Half breeds are nothing new to WoW and being nomadic is an individual's choice.
Even if it was lore bending (maybe it is, I am not well versed in Alliance side lore) it doesn't hurt to bend things a teeny bit to make a character work as long as it's not incredibly drastic.
I would say this person has never quested through either Duskwood or Westfall. There has always been dissatisfaction enough in either place with how Stormwind responded to the concerns of the outlying towns and villages to warrant more breaks with the system that just VanCleef.
If everyone stayed at town, with their family, there would be no exploration and no study in farflung areas. Both of those have long precedence in lore. IMO if there's any question to be had it's with the nature of cross breeding, NOT with being a wanderer.
tl;dr, IMO you're fine. If you haven't run into question before tonight it's unlikely that you're playing him wildly off the wall, so I wouldn't worry about one person with their knickers in a knot.
(quick edit to clarify - note that I said IF there is any question, not that I DO think there is question about interbreeding. My brain goes biologically analytical places with that, but that's just me. It's not unheard of in lore, and is well accepted in the fantasy field in general, but as a comparison

There are a couple of NPCs you can use to back yourself up. There is the travelling baker who walks between SW and I think Goldshire or the Abbey and the other guy who pats right the way along Westfall. They may have a fairly small pat range but at least one of them specifies that he is a travelling salesperson so not all of the humans are looking for a place to settle down - in lore as I understand it Westfall should take at least two days to ride end to end, which is why Goldshire's inn is roughly in the middle.
