This is not useful or what you asked, but let me for a moment SQUEEEE about Chicago Diner and recommend that you go there. It's not entirely vegan (pricy Karen's is--and worth the money, but I digress...) but they are entirely vegetarian and will make most things on the menu vegan, and their desserts (including their shakes) are entirely vegan.
These are the BEST shakes/fountain drinks I've ever had. Ever. In my life. I grew up in NYC and waited tables in diners in Manhattan and know of what I speak. Go here. Have a shake. Their vegan cheesecake is also totally to die for amazing.

OMG you are singing my tune right now.
I've been eating super well all summer, but for the five days I'm in Chicago, I'm letting myself go nuts and try stuff. I'm super amazed at how vegan friendly Chicago is, especially since everyone (including me) assumes it's a meat town.
All the more important for me to make good choices on the road so I don't turn into a total whale after trying all this fabulous stuff. I'll totally check this out, thanks!!

I am taking a train from mid-coastal Virginia to Denver in a few days, and I, too, am totally into the idea of going to the Chicago Veggie Diner!! I found it while Googling around, and it looks really great! Glad to know it comes highly recommended.

there is another place that is at the tip of my tongue, and i just cannot think of it. so good, huge portions, vegan is easily made, and omg, the food. ugh. why can't i think of it? i was just in illinois, a friend did a gig right near it and brought me food from there since he knew we would be meeting up. i hate that i cannot remember things.
i grew up in billings mt! its a hole! hahah i havent spent a lot of time there the last few years, but there is the one organic whole foods type store, its insanely over priced but its your best bet for finding vegan food, and they have a deli counter with hot food. its called the good earth market. http://www.goodearthmarket.coop/ its def your best bet as far as i can tell. if youre not leaving for a while, i can msg from friends in billings and see if they have any other vegan suggestions. let me know! oh and as some one who travels a lot via the road, the thing that has been a life saver over and over is an electric tea kettle, there is SO MUCH you can make with hot water. any rest stop will have an outlet, its so easy to pull over, make and eat oatmeal and be back on the road in 20 mins. ;D

I don't think I'll take a kettle since my packing list is already gigantic. If ever we find a Starbucks, I'll get hot water there. I'm getting a little bored of oatmeal lately and I'm not a huge fan of soup, so it's not a super big priority for me.
also ive have yet to find a gas station in the country that doesnt have hot water, its with the coffee. also i suggest city brew instead of starbucks, excellent coffee. i posted a facebook msg to my billings friends asking for suggestions. ill post any replies i get!
wendy's no longer boils their potatoes in chicken stock? i know they did that years ago because there was an msg warning on the plain potatoes(i have msg triggered migraine spikes, so i no longer eat wendy's potatoes. i have, however, discovered yukon gold potatoes microwaved, if you have to, are AMAZING!!!!).
Boil the baked potatos? Never heard that, there's nothing like that listed in the ingredients. My friend that used to work there says that they don't do that.
ok, good. years ago they did do that. honest. we had to ask because i would only eat the potatoes, and would get screaming migraines. it turned out that before they were baked, they were boiled, and they did it in a stock with msg. it got left on the skin, and i eat all the potato, and would get horrid migraines from eating there. good to know i can go back!
I don't eat bread, rice, pasta, or potatoes most days. I guess low-er carb would be more accurate. I mostly eat vegetables and protein, and only smatterings of beans and fruit.
I would LOVE to hear about how you accomplish this. I'm trying to lose weight and only avoiding carbs does the job, BUT I want to tear my own hair out eating nothing but carrots, broccoli, beans and tofu (with the occasional Field Roast tossed in, even though they have grains in them.
It's especially hard for me because I am allergic to all citrus (including citric acid, the most common preservative) and I hate most vegan staples, like mushrooms, eggplant, tomatoes.
