Heart-Healthy Chocolate Chip Cookies from Vegetarian Times

This recipe was emailed to me via Vegetarian Times a month or two ago, and I finally got around to trying it last night. The verdict? Awesome. They're really filling for cookies, too. Not quite your average oatmeal cookie, either. Definitely give them a try.

Also! My friend is allergic to nuts :( Would substituting ground pumpkin seeds or sunflower seeds be reasonable? And do you think that the abount (2 cups) would remain the same?

I suspect substituting an equivalent amount of seeds would work fine. The nuts are processed to produce a homemade nut butter, more or less, and both sunflower and pumpkin seeds produce wonderful butters. I'm not sure about the volume, as walnuts are much softer than, say, pumpkin seeds and that might be a factor? I suspect if there needs to be more/less, though, it can't be THAT much... But you never know until you try, right? And nothing brings friends together like baking adventures, so I say dive right in. Be sure to share the results, too!

if you used sunflower or pumpkin seeds you will need to add some oil to them as they aren't oily enough to produce the same type of butter as walnuts do.

These are my favorite to make. My husband hates all nuts; but he ate one of these after I first baked them without knowing they were mostly walnuts, and now he grudgingly admits walnuts are amazing

Just made these! Wonderful find, Micco! I halved the recipe, used a blender, & even accidentally added too much oil... & they still came out amazing! This is definitely going in my vault/is my new default cookie recipe.
