Okonomiyaki

So I surfed the tags and found some entries about Japanese mayo and one that was sort of about Okonomiyaki but not that helpful to me. So here's a brand new post. What do you sub for the eggs? I saw a mention of silken tofu, but how much, and what do you do to it? It's been a very long time since I've made okonomiyaki because I just assumed it was ( Read more... )

Thing is, Veganaise is the only thing we have up here. Maybe once we move downstate I'll have more options :[

Veganaise is awesome on okonomiyaki, with a bit of dark soy sauce on top in place of the traditional okonomiyaki sauce. Or, if you can get it, Vegetable Bulldog sauce!

I normally use ground flax seed mixed with water in place of the eggs, and it turns out great!

Savory Vegetable Pancakes - okonomiyaki
2 cups water
1/4 pound regular tofu
2 1/2 cups whole pastry flour or unbleached white flour
1 teaspoon salt
2 teaspons baking powder
4 to 5 cups thinly sliced or slivered vegetables
onions, carrot matchsticks, cabbage, broccoli
green beans, mushrooms etc.

puree water & tofu in blender until smooth
combine flour, salt & baking powder in a large bowl
and mix well

Pour the liquid mixture and mix lightly Add the vegetables and mix well to combine

Cook large pancakes on a lightly oiled skillet or griddle over medium-low heat until browned on both sides Serve while hot with soy sauce or tonkatsu sauce

We'll be primarily in Hikone, taking trips to Nara and Kyoto and probably other surrounding areas. We're there to look at visual culture (architecture, art..) I think we'll mostly be eating group meals, so I'm not sure how much we will get to choose our own places to eat.

Hmmm well that might make things difficult. I would recommend learning the kanji for the different kinds of meat, so that you know to avoid them. I have not yet been to Kyoto (I'm going at the end of March), but that pocketguide book does have a list of vegan friendly places in Kyoto...
You could also get a vegan passport

I make it with a flax egg and it is wonderful! I top the pancakes with vegetarian oyster sauce, Veganaise, and seaweed sprinkles. To die for!
