That looks so good. I've used tamarind, but never gotten it right. I think I need to get over my aversion to adding lots of sugar and accept that it's necessary for pad Thai. If I'm already eating my weight in oiled rice noodles, I might as well just do so.
Mmm, thank you! I can never get my pad thai quite right. It looks yummy. That's a lot of tamarind paste, though - I think there's about 3/4 c in the container I buy. It must not be that strong? Or maybe mine is more concentrated?
