I finally bought some casserole dishes (two and three quart). So, I'd love some recommendations for tried-and-true casserole (also pot pie) recipes

This is the only casserole recipe I've ever used...and the only one you'll ever need because it's completely flexible. You can make a million casseroles with this recipe

in casserole dish: layer of tots - layer veggies of your choice (greenbeans, mushrooms, carrots)- layer of tots.
in bowl: 2 cups or so* of cream of mushroom soup (imagine or pacific make good ones) mixed with one packet of mushroom gravy powder (it thickens and adds flavor) and throw in some pepper to even out the salty from the tots
pour soup/gravy on top of tots/veggies and pop into oven @375 and bake until tots on top are browned
*you want plenty of liquid because the tots will soak up a lot while cooking- if you look at the side of the dish while you are pouring the liquid onto the tots the liquid should be about three quarters to the top of the layers.
I love the Biscuit Casserole Stew in the Vegan Family Cookbook. I can type it up if you are interested. My boyfriend calls it the Thanksgiving Casserole because it's so hearty and he thinks it tastes like a traditional Thanksgiving all in one pot. Sooo delicious. Potatoes and other veggies with biscuits that bake on top.
