This is the only casserole recipe I've ever used...and the only one you'll ever need because it's completely flexible. You can make a million casseroles with this recipe...

MAKE YOUR OWN CASSEROLE
1c main ingredient (main veggie, mock meat, seitan, tofu, lentil etc...)
1c second ingredient (celery, mushrooms, peas, or a second cup of main)
1-2c starch (noodles, rice, crushed chips, croutons...)
1 1/2c binder (veganaise, whizzed silken tofu, tofu pate, bean dip...)
1/4c "goodie" (pimento, olives, water chestnuts, chopped nuts, capers...)
Seasoning
Topping

1)Combine main ingredient, starch, binder and goodie.
2)Season to taste with seasonings like Braggs, lemon juice, vegan worchestershire, garlic, green onion, curry or grated vegan cheese.
3)Mix thoroughly. If the mixture seems dry, add some veggie stock.
4. Place in a lightly greased casserole dish.
5. Spread over the top buttered crumbs,crushed potato chips, cornflakes, chopped nuts or Chinese noodles.
6. Bake at 350F for 30-45 minutes. Use the longer cooking time is you have uncooked celery, green pepper or onion as an ingredient.
