I finally bought some casserole dishes (two and three quart). So, I'd love some recommendations for tried-and-true casserole (also pot pie) recipes.
A few qualifiers:
~ Recipes must be flavorful...can't overemphasize enough how much I hate bland food!
~ I prefer whole grains and flours to white ones
~ No nutritional yeast, soy sour cream/yogurt/mayo/cream cheese, yams/sweet potatoes/winter squash
Also, are there any books that focus on veg*n casseroles? I have so many cookbooks but not too many with recipes that'll help me make good use of my new bakeware!
