Okay, so I just got this book in the mail yesterday afternoon and was wondering if it's too soon to ask if anyone (especially those of you who recipe-tested!) has any favorite cupcakes to recommend ( Read more... )

i don't have that cookbook, but i wanted to comment on your frosting dilemma. i only make buttercream frostings with earth balance, and i find that 1/2 cup earth balance blended with 3-4 cups of powdered sugar is a good mix. if i am adding cocoa, then i melt the earth balance, but if i am not, then i don't.

I've only made the vanilla cupcakes with the ganache topping so far. My ganache was a bit runnier than it should have been, but it was still all very yummy.

By and large the green tea cupcakes have been a huge hit with everyone who has tasted them.

My personal favourite however, are the hazelnut ones with espresso cream filling. They are a bit more involved, but oooohhhhh so good.

I can't wait to get my hands on a print copy of the book!

Ooh! I also really like the Mexican Hot Chocolate ones, and my wife really likes the Brooklyn Brownies ones.

Oh, I forgot to say that I made the Cookies & Cream ones....and except for the frosting issue, they were really good. My husband is in a sugar coma, though...

I have never had an issue with using Earth Balance to make buttercream. One thing to be sure of is that it should always be cold (like, right out of the refrigerator) when you make frosting, otherwise it will definitely be runny and/or gloppy. This can also happen if you overmix it. In either case, it usually firms up a lot if you refrigerate it for a while.
